  • 1 head of Broccoli (stem removed)
  • 3 eggs
  • 1 small onion, chopped
  • 2 cloves of garlic, chopped
  • 1 teaspoon dried oregano
  • Salt to taste
  • Olive oil or coconut oil for greasing 
    • Optional Pesto Layer:
    • 1/3 cup olive oil
    • 1 large bunch of fresh basil leaves
    • Handful of parsley
    • 2 cloves of garlic
    • Salt to taste
    • Sliced tomatoes
    • Grated cheese (use your favorite keto-friendly cheese)

Instructions:

  1. Prepare the Broccoli Base:
  • Using a food processor or blender, pulse the broccoli florets until they reach a rice-like consistency.
  • In a mixing bowl, combine the processed broccoli with eggs, chopped onion, garlic, oregano, and salt. Mix thoroughly.
  1. Create the Pizza Base:
  • Heat a heavy skillet and grease it with olive oil or coconut oil.
  • Spread the broccoli mixture evenly at the bottom of the skillet to form the pizza base.
  1.  Optional Pesto Layer:
  • For an extra burst of flavor, blend olive oil, basil leaves, parsley, garlic, and salt in a blender or food processor until it forms a green, flavorful paste.
  • Spread the pesto evenly over the broccoli base.
  1. Add Sliced Tomatoes:
  • Layer sliced tomatoes on top of the pesto layer.

  1. Cook the Broccoli 'Frittata Pizza':
  • Cover the skillet and cook the pizza on medium-high heat for approximately 20 minutes, lowering the heat as needed to prevent burning.
  1. Add Grated Cheese:
  • After 10 minutes, layer the pizza with grated cheese.
  • Cover the skillet again and continue cooking until the cheese is melted and the bottom layer is cooked through.
