  1. In a bowl, mix together almond butter, coconut oil, shredded coconut, non-glycemic sweetener, and vanilla extract until well combined.
  2. Spoon the mixture into silicone molds or an ice cube tray or roll into balls.
  3. Freeze for about 30 minutes or until set.
  4. Store in the fridge.
